After years of homebrewing, we successfully convinced the administration of Case Western Reserve University that growing from a craft beer bar and restaurant to a campus-centric brewpub was an awesome idea.
Within one year, the passion and product grew outside the University Circle bubble and into other bars and restaurants in Cleveland.
Our steady growth would have been impossible without the right talent. When we began this adventure, we sought someone strong in science, but who had the soul and patience to tame the vision of The Scholar.
In that search, Head Brewer Aaron Wirtz was the "prototype" that filled every need the search required. Today, Aaron is guiding all of our Scholars on how to make the best beer in Cleveland and beyond.
